Hand made from harvest to glass.
The vineyard is located high on a hill just south of Gawler overlooking a valley that gently winds it's way down to the Adelaide Plains. This location produces a natural wind funnel that helps prevent issues of mildrew.
The vineyard is comprised of Merlot and Petit Verdot vines.
Merlot vines espalier along a single wire, approximately 1500mm high.
This configuration improves air circulation, reduces foliage contact with soil and aids in ease of hand-picking. The terroir of this location and soil composition produces a grape with intense colour and tannins, particularly with the Petit Verdot. This combination hasn't failed to impress.
The vines are pruned by hand and no insecticides or pesticides are used. The native birds are relied on to keep pests to a minimum, and they do a good job of that!
Bibaringa wines are hand made from pruning to harvest; hand pruned, hand picked and hand made. We planted our vines by hand, trained them, prune them, pick them, tip the buckets of bunches into the crusher and hand bottle them.
The Mount Lofty Ranges are abundant in bird life and sounds; carolling Magpies, laughing Kookaburras, Sulpur Crested Cockatoos, and a chirping chorus of parrots and lorikeets. As the grapes ripen, Lorikeets and Rosella's appear in great numbers with an insatiable appetite for the sweet grapes. To keep these theives from getting first dibs and damaging the crop the entire vineyard is covered with netting. This not only protects the vines, but the wildlife we depend on to manage the pests. The Theiving Parrot Vintage is appropriately named after these beautiful theives.
